Thoughts On Blending

        The first blended item of the post is a soup from Choosing Raw. I like to incorporate raw foods into my lifestyle as much as I can. Blended soups are the perfect way to do this! I am a huge fan of soups and prefer them to be filling and nutritious. This tortilla soup is one of my favorite blended soups to date. I lightly adapted the recipe to use what produce I had on hand and to omit the added oil. I also left out the salt because prefer my foods with minimal amounts of saltiness.

 

Raw Tortilla Soup (lightly adapted from Choosing Raw)

Ingredients:

3 tomatoes, chopped
1 large red bell pepper, seeded sliced
1/4 cup sun-dried tomatoes
1/2 cup fresh cilantro
2 large stalks celery, chopped
3/4 cup water
Juice of 1 Lime
1 tsp cumin
1/2 tsp chili powder
1/4 tsp paprika

Instructions:

Prepare all ingredients and put in high-speed blender. Blend until steaming and slightly warmed.

Add in any additional toppings you enjoy:

 

I topped the soup with chopped jalapeno, white onion, scallions, avocado, black beans, and corn and served with a side of chips for dipping.

 

This is a very light, yet wholesome, no cook meal perfect for spring and summer nights.

       This brings me to my next thought on blending: How to prepare dinners when you have a “blended” household – that is a vegan and an omnivore under one roof. I started following a vegan diet after my husband left for Afghanistan. He has been fairly supportive from afar, yet he still does not fully understand the concept of veganism. I think his greatest fear is that when he returns home I will try to force him to be vegan or only cook vegan foods.  I do not intend to do either of these things. While I do want him to adopt a healthier diet, it is up to him to fuel his body with food that makes him feel and perform his best. It will definitely be a transition period for both of us. It is extremely easy for me to follow my vegan diet because I am only buying groceries and cooking for myself; the challenge lies in being able to keep my current lifestyle while accommodating his as well and leaving everybody satisfied in the process.  

      My first idea for a “blended dinner” involves this vegan and delicious raw tortilla soup. While I would enjoy it as is, I have a few ideas to make it appeal to my husband as well.

  • Add shredded chicken, sour cream, and cheese (and of course extra tortilla chips)
  • Serve alongside a cheese quesadilla for a twist on the traditional grilled cheese and tomato soup dinner.
  • Stuff a flour tortilla with black beans, rice, and preferred veggies. Smother the burrito with the soup and heat in the oven (used as an enchilada sauce). While I would enjoy the burrito as is, a meat eater could add chicken or steak.
  • Poor over cooked noodles and shredded chicken and top with cheese. Bake in the oven until the cheese browns for a Mexican noodle casserole

       Even though my husband does not come home from Afghanistan for almost 7 weeks, I am busy preparing meals and ideas so he will realize that two totally different appetites can safely live under one roof. I will be posting more “blended dinner” ideas in the weeks to come and after his return to let you know whether or not I get the Omni seal of approval!

  1. This soup sounds delicious, and I’m adding it to the list of things to try! I’ve made tortilla soup with vegetable broth before…but it doesn’t quite have the same savory, homey taste as non-veg tortilla soup. This looks like it could fit the bill!
