It has been quite a while since I posted a One Meal, Two Ways idea! But here I am again….and I cannot believe I haven’t made a stir-fry until now. Well, I have made them before, but not for both my husband and I. This was probably one of the easiest meals to customize to our different eating styles and it is definitely going into my easy weeknight meal repertoire.
General Prep
- Cook brown rice
- Slice veggies of choice (bell peppers, onion, carrots)- I used a mandolin to make sure all veggies were the same thickness, that way they would all cook at about the same rate. Unfortunately I also sliced off a good bit of one of my fingers. Seriously, we found the finger chunk on the cutting board…it was gross and hilarious. At that point my husband had to take over slicing duties
- Chop and steam broccoli – I steamed the broccoli a bit first so it would be cooked through before throwing into the stir-fry
- Stir-fry sauce – we just used a bottled low-sodium, low-sugar sauce…any sauce would work
To make it easy we split the veggies in half and each had our own skillet. We cooked the veggies at the same time and then threw in our respective proteins of choice. Then we topped or mixtures with stir fry sauce until it was well coated and heated through and we served it over rice.

- I also added in kale to my dish. I let the veggies cook a bit and then I place the kale on top to let it steam and wilt (my pan is to the left above)
- Tempeh

My stomach is growling just looking at these pictures. And my finger is throbbing…it will be a good while before that chunk grows back!

Stir fry really is a fast tasty meal – I should do it soon. I’ve been into rice bowls of late which is essentially the same thing.
